Serves: 3
Ingredients:
For the fish
- 2 sole fish fillet (approximately weighed 350 gm)
- Juice of one lemon
- Salt to taste
- 2-3 tbsp of all purpose flour or corn starch
- 2-3 tbsp oil/butter
For lemon butter sauce
- 1 small onion finely chopped
- 1/4 tsp garlic minced
- 100 gm butter
- 1/8 cup of lemon juice
- Chopped coriander
- Salt to taste
Method:
Pan searing the fish
- Wash and pat dry the fillet with a kitchen towel.
- Squeeze juice of one lemon over the fillets.
- Rub some salt and drizzle 2 tbsp of oil on it.
- Marinate it for half an hour.
- Just before pan searing dust the fillets in some seasoned all purpose flour or cornstarch.
- Heat normal pan or a grilling pan with little oil and cook the fillets on both the side till done ,approximately for 7-8 minutes.
Lemon butter Sauce
- 1 tbsp onions chopped
- 1/2 tsp garlic minced
- Juice of 1 lemon
- 100 gm butter
- Chopped parsley or coriander
- Salt to taste if you are using unsalted butter
Method:
- In a pan pour in the lemon juice.Add in the onions and garlic mince and reduce the lemon juice to half on medium to high heat.
- Reduce the heat and mix in the butter till it melts and appears frothy.
- Switch off the flame and add in chopped parsley or coriander and salt to taste.
- Pour in over the grilled fish fillet and serve with some veggies on the side and ENJOY!!!
