Whenever I want to keep my dinners light and simple,but at the same time nourishing,I prefer having soups along with some nicely toasted slice of bread.Of course hot soups does not go well during summers,but I hope nobody would mind having such a nourishing food while sitting in an air conditioned room.Carrot and tomato soup is a very simple soup to make.I have used fresh tomatoes and orange variety carrots which are available in abundance in the farmers market nowadays which happens twice a week behind our apartments.So, now its time to quickly jump to the recipe.
Recipe
Ingredients:
- 6 medium carrots peeled and cut into pieces
- 4 medium tomatoes cut into quarters
- 1 medium onion chopped
- 3-4 garlic cloves crushed
- Salt to taste
- Black pepper powder to taste
- 1 tbsp butter/oil
- Fresh basil for garnishing
Method:
- In a sauce pan or in a pressure cooker heat butter or oil.
- Add in the chopped onions and crushed garlic.Cook till the flavors are released for about a minute.
- Toss in the carrots and tomatoes and add salt.Add 2 cups of water and cook for 2-3 whistles.
- Release the pressure and blend it with a hand blender.
- Adjust the consistency and seasoning by adding water and salt.
- Simmer for 5 minutes and serve hot garnished with fresh basil and a dollop of butter.
