Mediterranean Dips

When the temperature starts soaring and the days become warmer,craving for light and small meals along with salads and some soothing , healthy and tasty dips arises, then the mediterranean meze comes as an alternative.The dips from the mediterranean are one of the main type of meze(small dishes).Bread is the heart of a meze meal and pita dominates the platter especially the home baked ones .Baba ghanoush,hummus and tzatziki are the three most common and simple dips found throughout the mediterranean region.Baba ghanoush is a laventine dip made with roasted egg plant mashed to silken consistency seasoned with tahini (sesame paste),olive oil and various other seasonings while hummus is a pureed chick pea dip with tahini ,garlic and olive oil.Tzatziki is a creamy hung curd dip along with cucumbers.Below I share the recipes of these three dips.img_20180419_200339904_ll~31422543444..jpg

Recipe

1.Baba ghanoush(an aubergine/egg plant/brinjal dip)

Ingredients:

  • 1 large brinjal (aubergine) weighing approximately 600 gm
  • 4 fat garlic cloves
  • 2 tbsp roasted sesame seed paste (tahini paste)/powder
  • 1 lemon juice
  • Salt to taste
  • 2 tbsp Chopped mint and parsley/coriander(optional)
  • 3-4 tbsp extra virgin olive oil

Method:

  • Make small holes on the brinjal at some distance and insert 3 garlic cloves in it.Brush it with little oil and roast on a grill or can slice and broil in the oven.
  • Peel the roasted brinjal and discard the extra watery liquid.
  • Mash the brinjal with a fork or by hand into smooth paste.img_20180419_194044451_ll8276488.jpg
  • Add 1 raw garlic minced, sesame seed paste /tahini ,season it with salt to taste.
  • Squeeze lemon over it and drizzle extra virgin olive oil.
  • Mix in the chopped herbs which is optional and serve as a dip for pita ,salads and chips.

2.Hummus(chick pea/bengal gram/white chana dip)

Ingredients:

  • 1 cup boiled chick peas+ some boiled water from chick peas
  • 2 cloves garlic minced
  • 1/4 cup extra virgin olive oil+ some more to drizzle on top
  • 2 tsp roasted white sesame seeds/tahini
  • 1 lemon juice
  • 5-6 black pepper corn(optional)
  • Salt to taste
  • 1/4 tsp sumac powder to garnish(optional)

Method:

  • In a food processor combine all the ingredients except sumac powder and blend it into a smooth paste.
  • Adjust the seasonings and empty it into a serving dish.Drizzle extra virgin olive oil on top and garnish with sumac powder.
  • Serve along with pita,lavash ,falafel or with salads simply.

3.Tzatziki (Hung curd dip)

Ingredients:

  • 1 cup hung curd
  • 1 garlic clove minced
  • 1-2 tbsp olive oil
  • salt to taste
  • 1 tbsp chopped mint leaves
  • Black pepper powder to taste
  • Finely chopped cucumbers

Method:

  • Put the curd in a muslin cloth or in a very fine strainer to drain its excess water.
  • Mix in all the ingredients and the famous creamy dip is ready to be served with the appetizers.
